Hilfe mit UTF-8

Hallo,
Könntet ihr mir bitte mal Helfen? Ich habe Probleme mit UTF-8.
Leider weiß ich nicht, was genau das ist.

Jetzt wurde ich auf ein Problem aufmerksam gemacht:
